Coconut Infused Jasmine Rice

Ingredients:
  • 2 cups brown jasmine rice
  • 4 cups water
  • grated zest of 1 lime
  • juice of ½ lime
  • 2/3 cup shredded coconut
  • 1 ½ tsp. salt
Method:
  1. Combine the rice, water, lime zest, lime juice, coconut, and salt in the rice cooker or pot and set to cook.
  2. DO NOT STIR! Cook until all the water has been absorbed.
  3. Fluff and serve.
